Ingredients

  • unsalted butter
  • granulated sugar
  • brown sugar
  • eggs
  • vanilla extract
  • all-purpose flour
  • unsweetened cocoa powder
  • salt
  • chocolate cherry jam
  • fresh cherries
  • powdered sugar

Directions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch tart pan with a removable bottom and set aside.
  2. In a large mixing bowl, combine 1 cup of melted unsalted butter, 1 cup of granulated sugar, and 1/2 cup of brown sugar. Whisk until smooth and well combined, about 1 minute.
  3. Add 4 room temperature eggs, one at a time, whisking well after each addition. Stir in 1 teaspoon of vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together 1 cup of all-purpose flour, 1/2 cup of unsweetened cocoa powder, and 1/2 teaspoon of salt until combined. Gradually fold the dry ingredients into the wet mixture using a spatula until just combined and no flour streaks remain.
  5. Pour half of the brownie batter into the prepared tart pan and spread it evenly. Spoon 1/2 cup of chocolate cherry jam over the brownie layer, spreading it gently to cover. Pour the remaining brownie batter over the jam, smoothing it to cover completely.
  6. Gently place the pitted and halved fresh cherries on top of the batter, pressing them in slightly to ensure they bake into the tart.
  7. Bake in the preheated oven for 25-30 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs. The center should be slightly gooey but not liquid.
  8. Remove from the oven and allow to cool in the pan for 10 minutes. Then, carefully remove the tart from the pan and let it cool completely on a wire rack.
  9. Once cooled, dust the top with 2 tablespoons of powdered sugar for a beautiful finish. Slice and serve, enjoying the rich chocolate and tart cherry flavors.
